This coffee is decaffeinated using the Moutain Water process that is tradmarked to the Descamex facility in Mexico. A chemical free process, Mountain Water method removes roughly 99% of the caffeine while maintaining gentle notes of the coffee. Our Veracruz coffee was sourced through various small holders across the mountainous region, washed, and fully sun-dried.

Veracruz is known as the “capital of coffee” in Mexico, it is the second largest producing state in the country. Located on the southeast coast, Veracruz is historically the gateway of coffee into Mexico with the first plants arriving from the Caribbean in the 18th century. Across Mexico half a million growers depend on coffee for their livelihoods, usually intercropped with citrus, corn, and bananas, a majority of farmers are smallholders with less than ten hectares (24 acres).

In the 2010s coffee leaf rust devastated crops throughout Central America, fortunately, the coffee industry and governments rallied to support farmers. By the 2017 into the 2018 harvest season over 35% of Veracruz coffee farms were replanted with leaf rust resistant varieties, along with support throughout the rest of Mexico, coffee production has rebounded with an USDA forecast of 4.1 million 60kg (132lb) bags for the 2024 crop.

Similar to our Puebla, Mexico coffee, Veracruz coffee is predominately shade grown, a sustainable growing method that helps to keep a balance of bio-diversity and reduction of the need for pesticides in the production regions. Complimented with our all-electric roasting, where we achieve ~21% reduction in green house gas emissions from roasting.
